Polyphenols and oleocanthal are two of the highly healthy components that make our products unique.
POLYPHENOLS are antioxidant compounds found in olives in large proportions, which is why oil has been “the great preservative” since ancient times . At the digestive level, they provide a perfect balance to the diet. They improve intestinal irrigation and reduce vascular congestion in small arteries, avoiding the funnel effect.
OLEOCANTHAL is a natural phenolic compound found in high quality extra virgin olive oil and is obtained from pressing at low temperatures. It is the parameter that determines how healthy an EVOO is and has been shown to have anti-inflammatory properties similar to those of ibuprofen, a medication commonly used to relieve pain and inflammation. It is a non-steroidal anti-inflammatory compound that inhibits the activity of cyclooxygenase enzymes.

In addition to participating in various European H2020 projects, we lead others such as UP4HEALTH , which aims to develop new HIGH ADDED VALUE FOOD INGREDIENTS, biologically based, that are biofunctional and beneficial to health.
